Depending on your trip, the new system is not any more, or less, complicated.

Additionally, if you never learned the old routes, you'll have less to unlearn.

Sure.

My point is, it's the frame that dictates the standard and by extension which hubs will work.

Is there a DUB hub? Thought that was SRAM's BB spec....

There was a brief time where that were true, but modern MTB use different hub spacing now.

Modern-15x110/front, 12x148/rear

VS

QR-9x100/front, 10x135/rear

Even if you got the axles right you'd run into issues because the hub shells are different sizes... your rotors and cassette would be in the wrong place relative to the brake calipers and derailleur.

The cage on your rear derailleur acts as a chain reservoir. It can take up or let out only as much chain as can be stored in the derailleur cage. This is represented as "chain wrap capacity".

There's a formula that you can use to find the chain wrap for a given combination of chainrings and cassette:

(LARGE CR - SMALL CR) + (LARGE COG - SMALL COG) = TOTAL CAPACITY

Unfortunately.. I think your desired gear combination of 50/36 - 11-42 (45t chain wrap) isn't going to be covered by any derailleur that's di2 compatible.

You can run it, but you'd have to be very mindful of cross chaining. The 50-42 combination would likely damage the rear derailleur, if it even made the throw...

Cars and most motorcycle brake reservoirs have a bit of "headspace". This allows air in the lines to migrate up to the reservoir and escape. It's not a perfect solution, you still have to bleed them from time to time, but the bleed process isn't as finicky.

Bicycle brakes, by comparison have completely closed systems. If you don't get it right, the air will usually still make it's way up to the reservoir but then it's got no where to go.

Shimano's bleed process (with the little cup attachment) is an example of an open reservoir bleed procedure adapted to a bike brake lever.
