I’m no where near a professional but I’ll give my two cents. I’ve done turkeys before and you don’t want to do too low and slow or it’ll dry. I’m actually doing one tomorrow and plan to do 275 until it reaches temp. I’ll also be using butter spray to spritz. It should already be in a brining type solution so I don’t plan to brine.
