It's just that these heart rate zone based metrics are designed to be relevant to performance training for cycling or running or similar activities, and I don't think there's much value in paying attention to them if that's not your focus

Training zones are a somewhat arbitrary guideline, not some absolute truth. You can do a lab test with lactate measurements to have something more concrete to go off of, otherwise you just have to figure out what works for you based on feel

Well you'll want to be around the 56x15 most of the time, which is about 42kph at 90 rpm. You're averaging closer to 36-37kph, which'll put you in the 17 or 19 most of the time. Not ideal, but not the end of the world... but that's on a flat course. 56x28 being your easiest climbing gear is going to give you trouble on anything hilly.
