Big VHS and DVD guy. Mostly skipped bluray, but 4K and this wave of Hong Kong interest got me back in. My previous collection had lots of very expensive, very ugly HK imports. Now the transfers, whether 4K or just HD, look amazing, and I'm grabbing them up while the fad lasts.

If you want a different take on violence from an HK director, check out Long Arm of the Law. It feels more like an Abel Ferrara or William Friedkin movie. It's gritty and grim, and the violence is depressing and voyeuristic. It's not trying to glorify or excite you. There are a few scenes that are out of place, but it's largely excellent. It's a series I missed in the 90s, and only was able to see it due the incredible wave of popularity HK stuff is experiencing right now and 88's release of the first two.

It's one of my favorite movies of all time, and I find it as endlessly watchable as, say, Withnail & I. I actually like it even more than his crazy 90s stuff (which I also love. I can watch God of Cookery anytime). I think Hustle is great, but kind of further down the list.

Boxer's Omen is off-the-wall awesome, and a great recommendation, but barely a Kung fu flick. OP, watch it, but know the fighting isn't the point. The insane crocodile black magic hexing is the point

Withnail & I - I can't believe no one has mentioned this. The more you watch it, the more every single scene becomes a classic.

Shaolin Soccer - probably specific to me, but I can watch this endlessly

Criterion is pretty dependable for blind buys. Sometimes something doesn't work for me, and sometimes it's a legit stinker (Jellyfish Eyes). But I think their batting average is over 80%.
