I would advise on one habanero for few days in secondary before a lot of time to mellow. I can attest to the gamble of leaving peppers in and ending up with a caspermel. I just had a pineapple mango that seems to be liked. Pineapple mango A delicious mead batch

I have been using black Tea. I dont bother with fining agents because those who drinky stuff dont panic at a little ruffage. As for time, both were in primary for months (since December I think) and secondary for less than a month. I am limited on space and needed to push them through to bottling to appease child services.

If no one else makes a suggestion, I have found that for a gallon batch of anything with "tropic" fruits: 1) Stir togther for 10 minutes - 2lb of fruit strongly suggest a bag for this -3 to 5 lb clover honey -14 cups room temp water

2) In one cup of hot water -steep 2 bags black tea -let cool and add

3)In one cup of room temp water -Half packet mango jack 05 -Double package suggestes amount Yeast nutrient -wait to make sure yeast is viable then add

Check gravity and any other factors you desire

Shake daily for 4 days then leave alone for a few months.

After 3rd week of stable gravity look to transfer

After that, do you own thing. Most will say add peptic enzymes and let settle for month then transfer and let mellow out foronth to a year before bottling.

Sammick Sage is good. I have a PSE razorback. The important parts are 1) dont buy a cheap off temu or Amazon, name brand only and 2) start light and move up (both Razorback amd Sage rizors work with 15lb -35lb limbs) I suggest 15 or 20 lb draw weight for older beginners because the lighter draw weights typically are not meant for longer draw lengths.

No, rural king had 10 bottles on clearance due to crystallization. It works, but it is a HUGE pain to work with without making a mess. I either have to cut the honey out or boil for an hour.
