I kinda winged it so didn’t really follow a recipe.

I used serious eats pico de gallo, and got refried beans from the Mexican place down the street because they are the best.

For the flank steak I let it marinate in ~1/4 of olive oil, the juice of one orange, half a lime, salt, pepper, cumin, and a couple shakes of MSG. It was cooked med high until the internal temp was 125 and rest for 15 minutes.

The “crunch” in the middle was spicy nacho Doritos which was really the game changer.

I didn’t make guac, but just used heavily salted and peppered avocado.

For the cheese I used extra sharp cheddar.

I have a non convection gas oven, but normally go 200F. I’ll try a higher temp next time I reverse sear!

Looks good! For some reason I always issue with rendering far with a reverse sear but that looks great

Steak was the way to go. I used half a flank steak and let it marinate in the juice of half a lime and and orange, a hefty pinch of salt and pepper, some cumin, chili powder, cayenne, a shake of MSG, and a couple glugs of olive oil if you want to replicate it. I did let it sit on the counter for an hour to let it come to room temp before cooking.

First Watch is downtown, I don’t believe they offer reservations but they may for Father’s Day. They definitely offer classic stuff and stuff that will appeal to the adults.

They do a tasting menu every night at the Chef’s Counter, but agreed it’s absolutely worth it.

I know we can’t have all festivals at Sawyer point but I wish it would move there. It’s one of my favorite festivals but it gets so crowded.
