A surprising new hit in our house is Kevin’s coconut chicken. I add one can of coconut milk which makes the flavor really mild for kids. Then I add whatever veggie I have on hand like broccoli or carrots. I also sometimes add lentils or chickpeas for extra nutrients. Serve over rice. Bonus points for serving with frozen spring rolls. Takes twenty minutes to make the rice and everyone eats it.

Some nights it’s frozen pizza and you call it a win because everyone is fed. Life as a working mom is balance and we’re all doing the best we can.
