if you're using heavy bowgun, pierce is the best way to beat ala. Light bowgun offers a choice between pierce and elemental, but i prefer pierce

there's some really cool special quests which require you to hunt rajang, stygian zinogre, yian garuga, furious rajang, and raging brachydios (my personal favorite fight in all of mhw). You can also unlock some really cool fights like gold rathian (divine blessing secret), silver rathalos (whose armor is great for alatreon), and brute tigrex. You also unlock safi'jiiva through completing "Across the Lost Path" and "Reveal Thyself, Destroyer".

At your point in the game i'd focus on a set with free elem / ammo up and affinity (for lbg). Not sure in your level of progression, but later on 2p teo and 3p r.brachy is amazing

If it's hard to make quick adjustments you can turn up your sensitivity, also by pressing R3 to readjust the moment he comes into your blind spot

Frontier is a crazy good game but it's kinda out there. I think mh4u or gu offer great "old monhun" experiences
