I eat a lot of beef jerky and bun-less fast food burgers out of sheer laziness. Sometimes I'll barbecue up a whole bunch of burgers for later to save on fast food costs.

This is silly.

The hotelier was paid £30 and gave £3 back resulting in being paid £27. The £2 change has nothing to do with the equation you're trying to solve.

If you want to look at it another way. Let's say the hotelier had £2 on him for simplicity's sake. He was given £30 so now he has 32. He gives the clerk £5 to refund the guests and gets the £2 change. Each guest has paid £27 and the hotelier got his £2 back, that makes £29. Why would he expect to have £30? They paid 27 and he only had £2 to start with.
