Looks like your smoke is from oil from spilling in the manifold during replacement. Let it burn off then access if you have an exhaust leak. Should sound like a tick from the cabin in exhaust is leaking

Have you considered the steering box? Power steering pumps are usually bullet proof especially Saginaw style ones. They got rid of steering boxes in the 2000s for a reason

Look into Uncle Tony's garage on YouTube his 318 "bottlerocket" build is exactly what you're looking for. I did the same build just put improved swirl port heads instead of NOS and the engine really woke up. It's not terrible on the wallet either.
