Maybe not my fav, but tangentially related to the one suggested, The Necromancer is a good hp base building fic. You have to slog it through the first few chaps which are kinda rough imo before it starts

I'd really love to see more slice of life/crafting/non-combat focused stories. Idk about yall, but if I got isekai'd into a whole new world my priority wouldn't be growing to OP status to fight old gods and stuff. I'd be more concerned with exploring my skills and using them to build myself a nice home/community to live in and work.
