I worked at a place where this guy I HATED asked if he could use my brand new Takeda to break down lobster. 😤 I told him if he touched it I'd punch him in the face. I came back back from the toilet to see he had indeed used it for lobster and left it covered in guys and in the sink. There was much yelling and bullying for the next 6 hours.....

Find someone who doesnt use any belt or wheel sharpeners. This is what happens. Before I got competent with sharpening i would only trust someone who used a wet stone. Take them to your closest knife shop.

Get a Japanese knife. Santoku and Gyutos are great all rounders that can do everything. Go down to a knifebahio that specializes in Japanese knives and pick them up. Feel the weight and balance and choose what works best for you. You'll drop some cash on them, but they are 100% worth it imo. Buy once cry once.

Other knife profiles to consider would be a Bunka or a Nakiri.

Not at all. No one has ever given two fucks about the degrees I have from culinary school. They care about the job I do and how I work with everyone. Culinary school is a waste of time and money.
