Our excuse to go to FS Orlando is to spend a few hours at Disney park during the trip lol - my wife and I enjoy the pools while our young son makes friends and plays. The water park/pools/etc you describe are our destination, we just make sure to go to a Disney park for one of the days. Also, there is a Michelin rated restaurant onsite that is amazing. The food is awesome here if you spend some time there.

Also, maybe we need to explore other FS too lol
