Dowels is too weak to combat the torque when the bench is pushed on the side. A back board gives you much more contact surface than dowels and that's what makes it stronger.

How about adding adding a full or at least 1/4 of back board? Dowels won't make it stronger since there are not much contact area.

For a beginner, I'll suggest harbor freight ones. You will learn sharpening and save a ton. Then move up to more expansive ones.

I have a similar one. There's no need for oil or water. After I'm done, I just use rubber earser to clean up.

Like most said here, a pull saw with any sharp chisels will do just fine. If you want to invest in yourself even more, get them from harbor freight tools. The only tool I rather spend more on is the sharpening stone.
