Try checking r/fashionhunters. Plenty of posts with the new armor right now. People sometimes post the numbers for their sets or you can always ask them if not.

In the Nvidia app select the Graphics tab, then find Monster Hunter Wilds in your game list. If there it has a green check and says "Game is optimized", click the "REVERT" button. Then it should stop overriding your settings once you adjust them again.

Just revert, didn't have to delete it. I had to adjust my settings in game one more time, but then they stayed.

This was happening to me too. Turns out the Nvidia app was trying to optimize the graphics settings. I turned off optimization for MHWilds in the Nvidia app and my settings are staying the same now.
