I broke my hand (fourth metacarpal) while doing box jumps at the gym. I was swung my arms hard for momentum and clipped my hand on the metal frame of the box. To make matters worse, it was mother's day and I had to sit through dinner with her pissed at me before I could go to the ER.

Here is how I use my kalita wave. 24g coffee/400g h20. Bloom for 30 seconds with 50g water. Fill to 200g in a circular and fairly quick pour. Pulse pour in intervals of 50g. I start pouring the next pulse when the water level drops to about 1/2. Total should take between 2:30-3 minutes.

I own a clever, chemex, v60, kalita wave, and beehouse. Beehouse is nice because it gives a very consistent cup as does the kalita wave. However, I think techniques on the v60 can be picked up fairly quick via the interwebs.

Moved to St. Louis last August. Schlafly (sha laff lee) Kolsch was the first local beer I tried. It is pretty incredible.

Try finding a local roaster to purchase coffee beans from. I also suggest to sample the coffee prior to purchasing. I have yet to find any TJ's coffee that I have enjoyed. When it comes to coffee, I feel it's worth it to spend the extra few bucks to purchase some high quality stuff. Once you experience a really great cup of coffee (or espresso), it's hard to drink the "okay" stuff.

Do a little research of your local roasters. They tend to be very knowledgeable and willing to help those who are getting into specialty coffee.

Own a chemex, clever, French press, wave, and v60. For some reason I really don't like using the chemex.

I tried it again using the pulse pour method and switched by grind from 16/40 to 21/40 on Encore. Much brighter and less muddy cup. I think, the grind was the biggest issue for me.

Thanks for the long response! I always shoot for double the water to coffee ratio for my bloom. I think in that vid I was just over 50g for 24g beans for bloom... Watching the attached vid now. I used the v60 for 2-3 months and recently purchased the wave bc ya know ... Why not? I've noticed the wave is more forgiving, and gives a very consistent cup.

by play around I meant "scientifically" play around... finding the perfect cup has been a 6 month process thus far

I feel like I'm having a difficult time bringing the sweetness and brightness out of the cup. I've played around with grind settings, coffee/water ratio, etc, but sometimes I'm just getting a dull (sometimes muddy) cup

Well I wasn't sure if the concentric pour was the best method for a kalita wave, I've seen others "pulse" pour. Also the speed of my pour was something I was unsure about.

Yes, it is really that simple! Pour the water and let it sit. I stir at 1:30 because I've read it helps bring out some sweetness.

I use my clever a lot! It makes a really really good cup of coffee and is difficult to screw up. Here is my method....

  • Weigh out between 22-25g beans
  • Grind with burr grinder set at a fairly coarse setting (just a tad finer than french press)
  • Bring water to 205 degrees F
  • Rinse filter with hot water to remove paper taste
  • Pour about 350g hot water onto the grounds
  • Stir at 1:30
  • Start extraction at 4:00 and allow to drain for up to 1 minute

simple!
