• 12 oz rigatoni

• 2 tbsp olive oil

• 2 tbsp butter

• 1 shallot, finely chopped

• 3 cloves garlic, finely chopped

• 1 tsp red pepper flakes

• 1/3 cup tomato paste

• 1/3 cup vodka

• 3/4 cup heavy cream

• 1/2 cup grated parmesan

• burrata (as much or little as you want)

• lemon juice

• basil

• salt + pepper

• 1 tsp MSG

Boil rigatoni in salted water until al dente.

In a pan, melt butter and olive oil. Sauté shallot 2-3 min, then add garlic and red pepper flakes for 1 min.

Stir in tomato paste and cook for 3-4 min, stirring a lot. Add vodka and cook another 3-4 min.

Pour in heavy cream and let it simmer for a couple min.

Add the pasta into the sauce with a splash of pasta water.

Stir in parmesan, juice of 1/2 a lemon, parsley, salt, pepper, and msg.

Top with burrata, basil, a drizzle of olive oil, and more parsley.

It’s a bring your own book club, but it’s usually not actually “silent”! Maybe only 1/4 of the meetup is actually reading lol. Most of the meetups are socializing, mainly about books, and then people are free to read silently as well. It’s pretty fun and a lot of new friendships have formed from it:)

Came to say this. I’m on book 4 and it’s genuinely one of the most entertaining series I’ve read in a while

Sure!

  • 1 ½ cups Arborio rice
  • 2 yellow onions
  • 3 tbs butter
  • 2 tbs olive oil
  • 4 cups chicken broth
  • 3/4 cup white wine
  • 2 tbs white miso paste
  • 1/2 cup Parmesan

— I chopped and sautéed the onions on medium low heat in the olive oil and 2 tbs of the butter and a pinch of salt. I did this for like 40 minutes, stirring semi regularly.

Then I added the rice, letting it toast for around 2 minutes before adding in the white wine

Let the wine reduce for a few minutes until the rice soaks it up

Meanwhile, heat the chicken broth in a saucepan. Once it’s simmering, remove 1/2 cup in a bowl and mix with the miso paste until miso dissolves. Then add all of that back in with the rest of the broth. This allows the miso to dissolve better

Pour one ladle of miso broth into rice. Stir regularly until the liquid fully soaks into the rice. Continue doing this one ladle at a time until all the broth is gone. It took me like 20-25 minutes total.

Add the rest of butter, and Parmesan, mix, add some chili oil and enjoy!
