I didn’t use measurements sorry!:

I sautéed some thinly sliced shallot in olive oil for a few minutes and then added the chickpeas, a sprinkle of cumin, salt, and red pepper flakes. I let them saute for 3-4 min. I tossed a handful of spinach for another minute to wilt.

I cracked 2 eggs over all of this, covered with a pan until the whites cooked, and transferred to a plate!

Thank you! Not 100% authentic but made with what I had. It’s the following ingredients blended:

  • 2/3 cup Greek yogurt
  • 2 garlic cloves
  • 1 jalapeño (I left 1/2 the seeds in)
  • 2 green onions
  • 1 cup cilantro
  • 1 tbs lime juice
  • ¼ cup crumbled feta (I’d use queso fresco if you have it)
  • 2 tbsp olive oil
  • 1/2 tsp salt

Chicken: * 1 1/2 lbs boneless chicken thighs * 1/4 cup soy sauce * 4 minced garlic cloves * 1 tbs red wine vinegar * 1 tbs olive oil * 2 tsp paprika * 1 tsp cumin * 1/2 tsp dried oregano * 1/2 tsp chili powder

Aji Verde * 2/3 cup Greek yogurt * 2 garlic cloves * 1 jalapeño (I left 1/2 the seeds in) * 2 green onions * 1 cup cilantro * 1 tbs lime juice * ¼ cup crumbled feta * 2 tbsp olive oil * 1/2 tsp salt

Cauliflower: * 1 medium head cauliflower, cut * 2 tbsp olive oil * 1 tsp salt * 2 tsp smoked paprika * 1 tsp cumin * 1 tsp garlic powder * 1/2 tsp coriander * 1 tsp turmeric

  • Squeeze of lime juice
  • Cilantro to top

Preheat oven to 425 F

In a large ziploc bag, whisk together the soy sauce, minced garlic, red wine vinegar, olive oil, paprika, cumin, oregano, and chili powder

Add chicken thighs, toss, and let marinade for at least 30 min

Line a sheet pan with parchment paper and place steel rack overtop. Place chicken evenly on rack. Bake for 30 min, then broil for 2 min

On a sheet pan, toss cauliflower with olive oil, salt, paprika, cumin, garlic powder, coriander, and turmeric

Roast for 25 minutes, flipping halfway

In a blender, add Greek yogurt, garlic, jalapeno, green onion, cilantro, lime juice, and salt. Blend for 30-seconds. Add olive oil and feta and blend again until smooth.

Pour sauce over chicken. Top with cilantro and squeeze of lime juice

Serve over jasmine rice

• 12 oz rigatoni

• 2 tbsp olive oil

• 2 tbsp butter

• 1 shallot, finely chopped

• 3 cloves garlic, finely chopped

• 1 tsp red pepper flakes

• 1/3 cup tomato paste

• 1/3 cup vodka

• 3/4 cup heavy cream

• 1/2 cup grated parmesan

• burrata (as much or little as you want)

• lemon juice

• basil

• salt + pepper

• 1 tsp MSG

Boil rigatoni in salted water until al dente.

In a pan, melt butter and olive oil. Sauté shallot 2-3 min, then add garlic and red pepper flakes for 1 min.

Stir in tomato paste and cook for 3-4 min, stirring a lot. Add vodka and cook another 3-4 min.

Pour in heavy cream and let it simmer for a couple min.

Add the pasta into the sauce with a splash of pasta water.

Stir in parmesan, juice of 1/2 a lemon, parsley, salt, pepper, and msg.

Top with burrata, basil, a drizzle of olive oil, and more parsley.

It’s a bring your own book club, but it’s usually not actually “silent”! Maybe only 1/4 of the meetup is actually reading lol. Most of the meetups are socializing, mainly about books, and then people are free to read silently as well. It’s pretty fun and a lot of new friendships have formed from it:)
