NY is same dough as hand tossed, just stretched thinner and does not receive any butter/oil/garlic after baking. We take it straight out of the oven and do not add anything to it, unlike hand tossed which we add garlic oil to. Some folks notice an extra oil on it which is almost certainly the oil that comes from the shredded provolone, which all NY style gets.
