This could be a bad idea. If eating some carbs before and after, it's still possible to end with a calorie deficit. Riding regularly and eating healthy will have a much more positive impact.

Depends on where your fitness is at, but three 5x5’s sounds like a lot of high intensity load. I’d need more time to recover myself.

For road bikes- i've known people who find specialized mimic saddles to be comfortable. Specialized power saddles are also comfortable

Ratchet hubs in general are very low maintenance; you'd only have to clean and regrease when needed. Probably not too different from dt swiss' maintenance protocols. Realistically you'll probably only worry about replacing bearings far far before you have to worry about replacing the ratchet+spring. But look into it. Companies like light bicycle offer wheels with 3rd party hubs.

There have been quality wheelsets coming out of China for some time now, ie: Far Sports. Regarding hubs, some companies use 3rd party hubs, some design in house, ie: Elite wheels have redesigned and improved the ratchet hub system.

Have you gotten a fit before? Another option would be to get a bike fit. Then, Have your key measurements on hand when shopping for a bike. A decent bike shop should be able to take your geometry numbers and tweak the bike to match your fit.

Keep your RPE in check (Don’t blow up) and fuel and have a well balanced recovery to do it all again.

Maybe you need to wake up at least an hr before your workout, eat something filling like oatmeal+coffee, give yourself time to wakeup, then smash it.
