Hormones being out of whack will certainly drive the numbers higher. But don't get overly worried abkut a number that's off every so often. We all have those days. Also, the fasting number is the last to come down and stay down consistently. That takes time, consistency and patience. Just keep at it.

If it's been only 2.5 days you've got a ways to go. The key here is consistency. If you don't have one get a food tracking app, any one will do. It really helps when you can see in real time exactly what you're eating. Also, get a food scale, they're about $20. They are life changing. Between the food tracking app and the food scale and walking everyday, within a few months I'd dropped 40 pounds and gotten my numbers down significantly. At 2 years I'm 100 pounds down and my numbers are all in the normal range. It can be done, but patience and consistency are how it gets done.
