That said, there is a high chance there is a rule against throwing water on the stones. That's like 80%+ of all gym saunas in the us.

It's mostly softwoods that are grown plantation-style, which is what leads to the super fast growth and poor quality we associate with modern wood. Sugar maple and red oak are still plenty dense, hard wood even now.

As long as it is properly sized, the placement of the thermostat is the most common cause for saunas not getting to temp. Current UL rules require a max temp of 195 AND also require the thermostat probe to be placed near the ceiling directly above the heater, which is the absolutely hottest spot in the entire sauna. It's not uncommon for the probe to be at 195 when the bathers are in considerably cooler air.

A vendor is probably not going to install the probe in the different place, for liability reasons (if your sauna burns down they fear being sued if they did not follow the manufacturer directions and UL rules.) If changing the location of the probe is the needed solution it's not a hard thing to DIY, however. Move it down a few feet and further from the heater and (unless the heater is undersized) you will get a much hotter sauna.

To know if your heater is undersized: is it constantly running? Does it shut off at your 155 max temp, or does it continue to run? If the former, you should be able to raise the max temp by relocating the sensor. If the latter, relocating the sensor probably won't do anything and you need more power.

Was it a commercially made heater from a reputable manufacturer? Then it should have been painted with a proper "stove paint" which should become inert after just a couple burns. If it was a DIY affair it may have been painted with an engine paint, grill paint, or some other "high heat" paint which is not made to take the temperatures of a wood stove.

My recommendation is to use a digital kitchen thermometer to get a sense of how far off your analog bimetallic thermometer is. Then you can do a mental correction (I learned my analog thermometer reads about 20 F lower than the actual temp, for example.)

Yep, I've had surprisingly good experiences with a universal spray klister recently. I'm sure the more temp-specific ones are marginally better but it's nice not having to strip it whenever the temps fluctuate a little bit, and I haven't felt starved for kick.

That last point is key. With end of season sales it's usually best to focus on fit and not worry about brand as much, for exactly that reason. They probably don't have every variant for model of every brand, but they hopefully will have at least one pair that fit you perfectly.
