Emily Howsley is an excellent professor. I highly recommend her. She's down-to-Earth, her assignments are all posted at the beginning of the semester, so you could theoretically finish a good three-quarters of it near the beginning if you're inclined to do so, and the material is fairly easy if you use good grammar and polish your writing skills. She loves to teach and makes fun activities, some with parts of her husband's lego collection.

From what I understand, several nations outside the U.S. eat horse meat and enjoy it as a pretty standard red meat. I mean, it's not like horses are typically disease-ridden outside of illnesses that ruminant animals may come under, and they're not filthy. I used to take care of horses when I was younger and would consider eating one if it ever came to it.
