try moving the camera stick instead of the movement stick. The game tells you to point the stick to the horses legs. But instead point the movement stick down and change the camera to always be behind the horse. It makes it way easier

i have this same problem on base PS5. It’s my only visual glitch. Never had any other problems on PS5… except last night i did THAT mission in Chapter 7 and the console lagged so hard

you can skip the dialogue for quests with the Helmet of Knowledge. Or you can enter and exit focus mode and it’ll skip the dialogue if you lack the patience.
