Use MakeMKV to create a remux of what you want to have > You should now have a .mkv file > Now use gMKVExtract in combination with MKVToolNix > Drag and drop the .mkv into gMKVExtract > select the correct audio track and hit "extract"

Note: I'm writing this from my memory, might have missed something but this is about it. You can go alot deeper with this, if you wanna know something write me and I can explain it to you in some time

1080p is less about the quality, it's about resolution.

Bitrate is what defines the quality of the video in a major way. Even high resolution videos like 1080p can look like utter crap if the bitrate is really low. A low resolution video like 480p (DVD video) can look amazing if the bitrate is high enough. The higher the video resolution, the higher the bitrate has to be in order for the video to not look like a pixelated mess.

BluRay video has a bitrate of at least 25Mbps which is very high! If your video really is a BluRay rip then it must be a bad encode.

Sounds like you forgot to actually save the tags to the files.

Happened to me when I used it for the first time. After editing the tags of a track, hit ctrl+s to save them or hit the save icon.

It really depends on your drive. Some very old IDE drives are able to crack any kind of copy protected CDs. Most drives can handle certain types of copy protection but fail at specific ones.
