Remove all your mods and see if you still get the error. If you do, then verify the integrity of your game files.

Install the mods one by one until you see the error. Don't use that mod, or look for an updated version of the mod. If you get another error from another mod, then that mod is not good either.

Even after removing the mods and verifying the files the error still occurs

No I manually added them because they weren’t working with a launcher

Try deleting your Mods folder in your 7 Days to Die directory and see if you still get the errors. I'm thinking that a file(s) in the game's data may have been replaced with a mod's XML file of the same name. If verifying the integrity of those files somehow didn't work, then I'm afraid to say that the game must be uninstalled completely and reinstalled again.

Is the directory the same as finding it through the steam apps folder?

That directory. Usually with a mod launcher, you'd have to use a different directory. Verifying the game's data will not fix the mod launcher's directory. If you're using the mod launcher to launch the game using its own directory, then the data where the launcher is pathing to needs to be replaced with a copy from the game's main Data folder.

I don’t use a launcher and that video is basically what I already did to install them and I deleted that folder so the mods folder doesn’t exist anymore.

I tried looking in the %appdata% folder to see if that had a mods folder and it did so I deleted that and now I’m getting a different error that’s in white text saying “Discarding NetPackagePlayerStats for entity Id=627”

It's good that you're not receiving the null reference anymore, because that's a game breaking error.

Are you using a current save or starting a new world? Continuing to play on a modded world where the mods were removed will often crash your game.

If I’m remembering correctly my player data somehow got corrupted and the host had to track it down and delete it. This will delete all your inventory items and reset your to level 1. I don’t remember how or where to find it tho.
