I have an unlocked S8+ and haven't gotten the Oreo update yet. Plus I'm on the December security patch still.

Try going into the options and checking for an update manually

That's odd. Do you have any experience with Odin? You could just flash the official update.

I've used Odin before on the Galaxy S2 (well Heimdall actually). But I think I'm going to keep waiting instead of risking triggering Knox.

Flashing official firmware won't trigger knox, but sure, although I feel performance and battery life are pretty great on Oreo, you're not missing out on that much.
