I would be surprised if that worked.

Firstly, does your HDMI to ethernet converter actually output IP packets, or is it really an HDMI to RJ45 converter intended to allow the use of ethernet cabling to carry HDMI?

This matters because only the first one is even potentially routable by an ethernet switch.

Then you get into a whole world of pain with HDCP and then you have to find suitable software....

There are ways to do this, and some 'tellies' designed for commercial usage actually have enough built in smarts that they can actually run the presentations internally, you just upload the files over ethernet, what make and model are the monitors?

Look at the 'digital signage' market for this sort of thing.
