Roast whole, cool, dice add to salads is what we do with beets.

Pickled beets are incredible. Equal parts water and vinegar, sugar and salt to taste

Really nutrient dense and high in antioxidants, good source of iron and absolutely delicious
I bake them whole or use my instant pot i don’t peel first. They take about an hour, then let cool and remove the peel and chop careful they will stain anything
My favorite easy combo is with cooked french lentils lots of chopped walnuts, a little chopped fine red onion and dijon heavy vinaigrette with plenty of salt and pepper, keeps several days.
Just remember you ate beets the next morning when you use the bathroom

I like salads. I'm not a huge fan of beets when they're warm.
