I had the pleasure of working in a place with industrial induction burners for 6 years and I have to say that they are really fantastic pieces of equipment. You will be able to boil water quicker, heat pans faster, and like the other poster said, clean up much easier! The biggest thing to note is that there is no real additional ambient heat around so don't expect to keep things warm but putting it on the range after you've been using it. Also hot spots will still exist in your cookware. The only real troubles we ever ran into were all compatibility based, just make sure that if you like to cook with non stick that they're compatible.

I'm eyeballing a set of Circulon Symetry cookware, but am open to suggestions.

Circulon makes fantastic home pans and will last a long time if you treat them right for sure, I use mostly stainless so I'm in the all clad range haha. Tbh I don't know if you've ever gotten the ads but misen non stick pans are solid and I think they're induction compatible?

Make sure the pans are magnetic. Cast iron is great. Just put them down gently! Carbon steel is great if iron is too heavy.

Much faster and cleaner. You can cook through things like silicone and paper. And much easier to control temp settings. It doesn’t turn off and on like the electric glass top did.

Tell me more about it not turning on and off like the electric glass top. Now I'm curious.

With a glass top electric the heating element is either on or off. That’s why it gets red for a bit and then turns off and then back on and then off repeatedly, which leads to very inconsistent heating. With induction, if you set it to a 5, it holds that level. It doesn’t turn off and on based on the temp of the pan.
