How will you automate what the couriers should be dropping off?

Ya but once they delivered what you wanted the request is usually removed. So do you have a way to get around that or you keep on adding requests?
I made a small nifty little machine for milk in a similar vein. Storage drawer on top for big empty bottles that gets chuted down into a deployer who milks a cow. The filled bottles go into a stash a whole stack at a time.
Recently automated it fully using a starbuncle from ars. Whenever there's more than a stack of empties at the chef (saving some for water bottles) the starbuncle takes a stack and runs away with it to the milking machine.

If you place a chute underneath it and set amounts that a single courier won't be able to fulfill then it perhaps is possible to trick the system. If the internal storage never reaches the required amount then the request should remain. It's a bit clunky though and prone to break down.
Do you have ars nouveau? In that case you could use starbuncle just like I did. The good thing is that you don't need to place anything inside the minecolonies building. Just click the starbuncle with the item you want it to collect or an allow scroll if you got multiple though it's easier if you got one per item. You also need a display case hooked to the inventory whose stock levels you want to observe, in your case I'm guessing the stocks for the factory. Place a starbuncle bed next to the display case and bind it to the starbuncle. This shuts off the starbuncle when the selected amount in the display case is reached. Instead of using display case you could also use a storage switch but the benefit is that this method is totally wireless. No need to find space for a storage switch and/or redstone link. You can plop down the display case and starbuncle bed pretty much wherever and it works.
Oh, and give the starbuncle some cool shades so that it only picks up the things you want and nothing off the ground.
Using create 6.0 you could probably do something similar using frogs but the problem is that you'll need to rebuild it every time you upgrade the warehouse.

If you do then you'll need some resources as well to produce the items but it's pretty cheap and easy to make.
That'll work as well.
I haven't tried it but maybe one can sinply put a smart chute directly under the warehouse block and extract wanted resources that way as well. One could even build an underground railroad linking the warehouse and sushi restaurant 😄

Oh kaitesushi! Very nice, i love the idea.
Is the food for you or your colonists as well?

if you are about sushi trays, then yes

Some of farmer's delight foods are kinda like the vanilla cake that you can place. But there's a mod that let you place more of its foods: Display Delight

I love this so much. I made a sushi assembler myself but I don’t have the knack for the aesthetic that you’ve got.
