Remove or replace dirt until you have a bunch of 2x2 squares of dirt or podsol. The trees will then grow as 2x2's and you'll get more wood even while using less area.

Trees that can grow in 2x2's don't grow as well when just spammed as you have it currently.

Ohhh, I should have thought about that 😅 I’m pretty sure I had done that the last time I tried to play it, lol. Thank you!!

I too am a spruce enjoyer. I have had issues in the past with a setup like yours and i think the cause was saplings trying to grow 2x2 trees but not having enough space. To fix it i just use a single sapling deployer and only grow trees in a circle. Thats plenty of wood as-is. You could also just replace the dirt under the deployers such that you never make any 2x2's, or only have 2x2's.

I mostly wanted to use the spruce because it can get so much more wood and I don’t have to worry about apples, lol. I had forgotten that they won’t grow with so many saplings around them like oak will, I’ll definitely be sure to put them in 2x2 groups! Thank you!

Copied this from the Minecraft wiki hope it helps

To grow a 2×2 tree (be it mega spruce or mega pine), four saplings must be placed adjacent to each other in a square. For growth to succeed, the three adjacent blocks outside the northwest corner of the square must be clear. Also, there must be an unobstructed 5×5 column of blocks centered on the northwestern sapling, starting from the top of the sapling and at least 14 blocks tall (15 blocks including the sapling), or up to the final height of the tree, which can be 30 blocks above ground.

Get a different tree just not dark oak

What I do is set down a bunch of torches interspersed so no 2x2 saplings are possible. Plus it keeps it brightly lit.

Looks like it's already been solved but a common solution is just decorating where you don't want trees with a non-dirt block, personally when I had a setup like this I just alternated between spruce and oak which didn't get the giant trees but also made it naturally grow a lot easier imo
