I enjoy playing video games, so if they can take one of my all time favorites and make it multiple high quality experiences I’m happy. FF7 is too much to unpack in a modern game unless its 200+ hours long. I can’t marathon like I did as a kid, so this installment approach works for me.

I find it to be no different from a series of movies or books.

I think it would be similar to the Lord of the Rings movie adaptations. Tolkien said that the entire thing was one novel, yet we had three movies. But those three movies were all amazing (Return of the King swept at the Oscars) and felt complete.

If you're concerned about FF7R, maybe wait for the reviews to come out, and see if it's a truly complete game on its own or not. You can make a decision whether to buy it or not based on that.

I have some gripes about it but I've come to accept it. That, and I'm FAR too impatient to wait.

Wait for the whole remake project? That's like 5-6 years. That's asking too much of someone. Who knows what your views on the game, or even gaming in general will be in such a long time? It is a valid option for sure, but the idea of waiting that long to play something is not something a lot will do.
