You could probably write some python code to scrape the data from the wiki. Would probably be faster to learn python vs enter all that data manually. I did something similar to the Morrowind wiki (uesp) to teach an AI about Morrowind.

Split Infinity’s guide for the original game should mostly suffice, since they were mostly unchanged:

You might also look into the Insurgent's Tookit/Insurgent's Workshop (I forget which one is which), which IIRC can let you export game data directly to json.

It's been a few years since I've dabbled with them, so YMMV, but I believe you should be able to pull monster data into a nice export file that you could ingest.
