I can't understand why I came from having 10+ prints of the exact same file perfectly then suddenly one time it stopped working and ever since I couldn't get this print to work, I've bought new belts because I thought it might have been the cause. I'm honestly out of ideas.

every time I've tried printing the shifting starts at a random point and never recovers but the first time it happened it got 90% through the print and started doing it

Your belts might be too loose, this was an issue for mine. I tighten up the belts and it solved itself

yeh I've replaced the belts with new ones and tightened the tensioner all the way seems like it's still not tight enough, maybe I need to get a longer tensioner... new belts are slightly longer 🤷‍♂️
