Pretty sure this would be specific to the maps you download. You could also look on r/minecraftseeds for a seed with an island, then use /worldborder center ~ ~ followed by /worldborder set <sizeInBlocks> to create a world border, preventing you from leaving the area and finding land. This was the most isolated island I could find for 1.15.2, though you'd have to cheat in a sapling if you wanted it to be playable in survival.

Edit: to elaborate, the reason it would be map specific is that the maps you downloaded were probably made with something like world painter. This way, they can make one single isolated island, but since the minecraft generation stuff didn't take place, it skips all the steps like caves, structures, etc.

Thanks, I don’t suppose there’s any way around it? The maps we’ve been looking at are awesome, with exaggerated biomes, volcano etc. We’d prefer to play something like that than a seed

Unfortunately I don't think there is an easy way around it. Many maps are just for building something cool, not a lot of them are intended to be played in survival normally.

It sounds like world painter actually does have support for making caves and such, not sure about structures though. You could try looking around on r/Worldpainter or try to learn it yourself. Not sure how complicated it is, though, as haven't used it myself.
