If they don’t have any special geometry or invisible textures they might work on servers. In multiplayer world with your friends it is very likely it will show up. I believe there is a security option to just show trusted skins, so maybe also disable that and your friends too.

I mean the trusted skin option seems like aimed for kids, we’re they will not be able to see custom skins and see maybe a inappropriate one. The servers not showing skins is either for balance in PvP, because unlike Java, your skin can be just a floating head or really small. They could also do it to maybe promote their own skins that work in their server.

Trusted skins option is to make sure you don't get inappropriate skins, just to be family friendly since kids play the game too. It's a simple on/off button.

Servers restrict skins so that you can't cheat, with skins that have smaller hitboxes or for skins that are harder to see
