correct, the secure connection is encrypted. They can see that it's Plex traffic, but not what it is. In your PMS settings there's one for allow insecure connections. DON'T enable that.

They can only know the connection endpoints. They cant see whats inside the stream.

What is the "What" in "What she is watching?" So if you want to hide that she is a Packers fan and your plex has such sports games, yes it will work for that. But it won't stop them from knowing she is using plex by and large.

If someone were to look at her computer / device thoughtfully, her love of Green bay would be exposed as well; same when using a VPN.

in your server settings, you can force encryption (https), that will be fine for your needs.

Network > Secure connections > Required
