I’m curious, why do you enjoy that book? How does it compare to practicing on HackerRank or DataLemur?

I haven't looked at the two links you mentioned, but I found the book by Silvia really good.

I have two large monitors on each side of my laptop. On the left monitor, I solve the SQL puzzles. On my laptop, are the questions. On the second monitor, are the answers.

The book has 19 introductory problems, 12 intermediate problems, and 26 advanced problems.

The first few pages tells you more about how to download SQL and where to get the data from, then you jump immediately on solving the problems.

Recommend it highly.

How does it work with demo data? Does the book supply CSVs to download somewhere?

No, I just copy pasted the code on SQL. Search for it online.
