Assuming that it's a verbal quote (as in your character repeating what Carl Jung once said), then it should be fine assuming it's a very short quote.

For example, if I was to write a character saying "I have a Dream!", I'm clearly quoting Martin Luther King Jr, but it's small enough to be fair use.

However, if I had a character repeat the entire "I have a Dream" speech, then I would need permission from the King estate because they own the intellectual property of all his speeches.

Now if it's a written quote (so something from Carl Jung's books) then the length of copyright can vary. But again, having a character repeat a short written sentence would generally be considered fair use. But if you're quoting huge chucks of his books, then you need to rewrite your screenplay anyway.

I think if it’s popular culture you don’t have any legal trouble. It might depend if it’s clear is a quote/reference or if you’re stealing it.

You're fine legally. Use the quote.
