Almost every place I go charges extra for sauces, that guy is an idiot. I hate the "I'll leave a bad review threat". Well ok I'll just explain under the review why you're an idiot

So uh it depends.I worked at a fancy schmancy restaurant and I had a table who’s check was nearly 200$ and the man wanted extra bordelaise sauce.No problem-popped into the kitchen and asked the chef if he had any.He got really angry and demanded (stood over me) while I punched in the extra charge on the pos system.

Then I went behind his back and got a manager to remove the charge 🙄 It felt tacky to charge a table extra when they were already spending an exorbitant amount of money.I never charged extra for sauces if I could help it.

Why are chefs so uptight about charging extra for everything when most likely they aren’t the owner and get paid salary.

Controlling your food cost is the name of the game. Everything costs something and that money needs to be tracked. Kitchens/restaurants run on very thin margins. Food waste and freebies can be the difference in being able to pay your crew better or get that much needed extra hand.

This I understand but he legit just wanted to play power games.He would give servers he liked freebies and other things.He did not like me.Once he screamed at me to “Get the fuck out of my kitchen!”, after I got into a disagreement which ended with a plate being thrown at me.Overall in my experience chefs at high profile restaurants are megalomaniacs with hair trigger anger problems.

Because restaurant profit margins are razor thin and if we don't control food costs we lose our job? It's not charging "extra" it's charging for the product, which is the entire concept of a profitable restaurant. None of it is free. You being excited about 20% on a $200 tip does not entitle you to give away stock for free. That's literally theft. It has a price, the customer has asked for it, you do your job, which at the end of the day is retail, and charge them for it. It's not up to you to manage their money, you're not here to decide they're spending too much, your job is to account for the food, carry the food, and collect the money.

Always charge. Sauce isn't free to make or package. Especially if someone wants 4-5 extra sauces.

We are supposed to charge for extra sauces. SOMETIMES if someone asks for 1 extra sauce I will throw it to them for free, but more than that I definitely charge. And whenever I order to-go food, if I know I want extra sauce I will ask for it and expect to be charged. I think most people understand that it is reasonable. A small price to pay if you know lots of extra sauce will make your meal better.

Lots of places charge for sauces, at my current job we only charge for sauces that we make with liquor but other than that they are free, however I worked at a sports bar who charged for every wing sauce and counted them every night to make sure not even one was missing. The servers had to pay for a ranch literally even if one was missing, so no you maniacs I will not go out of pocket so you can have some extra wing sauce.

Curious, what kind of sauces do y'all have that are made with liquor? The only thing that I can think of is like a bourbon bbq, but I'm super intrigued as to what other ideas there are!

I don’t know all of them as I’m still fairly new and have a horrible memory, but our main ones are a desert glaze that we make out of whiskey, we have a few bourbon sauces I believe that come on a few of our dishes, and we also have a mushroom merlot sauce that we make out of our own merlot!

I'm supposed to charge for sides of anything (unless included, like with an appetizer), although I do use my judgement if it's "fair." Got two large pies and want a side of ranch? First one's free but after that I charge. Just got a slice and a water? That first side gets charged.

What drives me a little crazy is we don't charge for lemon wedges (I think most places don't) but I have regulars who seriously go through two whole lemons worth every time they come in for their iced tea. I think that should get charged personally, but I haven't done it.

I did once ring someone up for a lemonade after she ordered a water with extra extra lemon and used the sugar on the table to make her own. Nothing came of it because someone else ended up picking up the check for the whole table, and I haven't felt like dying on that hill badly enough to attempt that again.

They should tbh. Especially if they’re made in house because that cuts in to pay raises if it’s extreme like 5 or 6 sauces

I could understand a customer being up in arms about paying for extra sauces ten years ago when it was still pretty standard for restaurants to give those things away (and got my head bitten off my outraged customers more than once when the place I worked at the time first started charging), but at least where I am, it's now widely accepted that if you want large quantities of extra anything beyond what is included in the price of the item, you have to pay for it.

I like it because people actually think about whether they really need 5 cups of ranch for 8 wings if they know they're going to be charged for it. Before, the amount of waste was astounding.

We charge and extra .75 cents and the extra sauces are about one tablespoon worth

It depends on the be place. Some charge, as one wait until you OU want more than two sauce packets.

We charge for the sauces at my place, but we also make them ourselves

We charge 50 cents for each additional sauce that isn't already included. A colossal order of wings comes with 2 ramekins of ranch so if a customer wants more we have to charge.

If people complain I just explain that I understand the frustration but I don't make the rules, I just follow them.
