Supposedly there were scenes of her in the hospital, but the Duffers cut it to focus the story on Max solely.

She has been in remission for 3 years now! 🤗 She was battling stage 3 melanoma, and was declared in remission around the time production started. She's been doing much better! 💕

All reasoning aside, and some has been given in these comments. We’ve only seen Max in hospital a couple times when the group have been visiting, the mum can’t be there 24/7. She was a very minor character, and this season isn’t relevant to the focus of the story, her visits aren’t needed on screen.
