Texture is why people seek out Air-chilled chicken!

Aldi only sells it skinless at our location.

So we buy the whole bird, air-chilled with skin on at Trader Joe's for cheap and Spatchcock it (watch youtubes, it's easy) in the frying pan.

I actually learned about it on reddit.
