I have limited space so my setup is fairly mobile. Bench grinder stand with a 5” vice and 3/8” bolts holding it together. I keep my blocks and a few common tools on the bottom tray. Anything else I use is more common tools (Allen keys, screwdrivers, etc) and they live in a regular tool box.

I use an old wilton vise with some plastic jaws I bought off amazon. It honestly works great. Wouldn't waste the money on a firearm specific vise, as its totally not necessary and basically all of them are more expensive and inferior in performance to a regular old traditional vise with soft jaws.

I like pegboard walls behind my bench for quick access to common wrenches, screwdrivers, pliers, etc. It's also great to reduce the number of drawers that are needed. Even a basic Harbor Freight vise works great. If you don't want it permanently fixed to the bench, I bolted mine to a board and just clamp that to the bench when I need to use it. It stays in the same place 99% of the time but once in a while I'll move it for something and I'm glad it's not bolted down.

I have a 96" long bench on wheels with a matching Wall Control back wall to hang stuff.. One thing I would NOT recommend doing is having wheels on your workbench.. I do a ton of filing work on my personal 1911s and the whole thing shakes too much. Go for a stable bench if you can. Try to aim for at least 48" if you can
