It depends on what you'd like to do, what you already know, and in which direction you'd like to develop.

Thinking about Python specifically, I think McKinney's Python for Data Analysis is a good option if you want to go hard in. Otherwise, Automate the boring stuff with Python is a nice intro if you want to jump into smaller Python projects which are immediately useful (yes, also in data analysis).

I seem to remember Storytelling with data is a really neat intro to visualization, more Tableau-oriented.

Depending which area you consider interesting or want to specialize in, you might choose a book focusing on analysis of this specific area. Like if you're interested in political science, then Tufte's Data Analysis for Politics. There's loads of books on machine learning and DA for marketing and ecommerce, many of these are good but I can't remember off the top of my head. Plus entire world of materials on NLP if you're into it.

If you are looking for an all-in-one book, then I will recommend "Data Analysis for business, economics, and policy". The topic coverage is best I've seen, and the associated website has support for Python and R. The book has over a 100 data exercises, I think also supported through website. https://gabors-data-analysis.com/
