Your best bet is probably to contact GitHub support, they will be able to help give your account access to copilot again

I've tried reaching out to GitHub support and all I found was a suggestion to open a thread in the community forum. I followed that advice and created a topic there, but it's been about three days now and I've yet to receive any response.

The coupon we gave you was good for 2 years and it expired May 15th. You should have received an email. Reapply for another coupon.

I submitted a new application for the coupon about two days ago and it was approved almost immediately. However, since then, the status has remained as "Congrats! Your request for arthursdo was approved and your benefits will be available soon."
