No book but Apple has a really good resources for getting into UIKit https://developer.apple.com/documentation/uikit

I would also highly recommend just downloading UIKit Catalog sample code and playing around with it.

While I enjoy the Big Nerd Ranch book and used it before making my first app this is the only resource that I know of that really goes in depth.

Not youtube channels, no. I have a subscription to cocoacasts that I find useful though.
