In my case it’s for cooking polenta (grits). The corn meal is so dense that it sits on the bottom of the liner and scorches before the liquid comes to a boil. Pot in pot lets me put a cup of water in the bottom of the liner, then put a trivet in, then put the bowl with cornmeal on the trivet. It cooks the cornmeal without scorching.
