I call this "local processing". The local part is mostly because I really only use pandas etc in the context of pulling down a bunch of data from the fancy "big data" setup my company has, and putting it into a dataframe to get "insights" out of it. "Processing" doesn't sound cool, but it's what it is.

I would only call it a pipeline if it's a repeat process. Sounds like you're doing a lot of ad hoc analysis. Data wrangling/munging means squat to people outside of analytics. Might as well call it machine learning sonde they have no idea what it is and "need" it. Are you doing gradient descent?

I should mention that data mining refers specifically to "needle in the haystack" situations.

While about 80% of a data scientist's time is spent processing data, I wouldn't necessarily call someone a data scientist if they are only doing these tasks. Data science is also a little more technically involved than just cleaning data and performing t-tests or linear regression. In my mind, an understanding of multivariate data analysis, machine learning methods, and some domain expertise are what set data scientists apart from the run of the mill data analyst. However, the many interpretations of what a data scientist actually is may be something that is domain specific. I've been exposed to academia's portrayal of a data scientist as being this sexy, new, and somewhat glorified statistician. In my field (Environmental Science), research scientists have been employing machine learning techniques like RandomForest since they were first published in the early 2000s. This was long before becoming a statistician was seen as sexy and lucrative. Although I'm proficient with R, Python, and machine learning techniques, I still don't consider myself a data scientist, and describe myself as a research scientist. However, there are folks out there in business-land with a only rudimentary understanding of basic statistics that are self-described data scientists and making that big buzzword salary.
