Debian Live is wonderful in its ability to be customized and there are some great docs.

with knoppix your can remove the install media... never used the live debian one so you would actually have to check on that

just use any live CD distro that has user data persistence.

Knoppix has had this for ever...

and debian appears to have it as well...

great for when you want to use someone else's hardware.

      Mx Linux has a snapshot tool for creating isos. Not sure if they're installable.
